The Spiny lobster or rock lobster, which is found in Sri Lanka belongs to the family Palinuridae and has long antennae, unlike the ‘clawed’ lobster found in the more temperate oceans of the world. Spiny lobsters are fished off the Island’s reefs, rocks and mud banks and drift about the water column in their planktonic stage, but are bottom dwellers or ‘benthic’ as adults. Female lobsters carry thousands of eggs on their modified swimming legs, or ‘swimmerets’ and are said to become more fertile with age.

King fish is a long, slender, streamlined carnivore with a forked tail, greenish blue back, silvery sides, and a white stomach.
It has a yellow stripe that runs from its pectoral line to its caudal fin, and its dorsal, pectoral, and caudal fins are bright yellow.
King fish are fast swimmers with smooth scales and live in coastal waters, rocky reefs, and sandy areas, sometimes entering estuaries.
They can be found in shallow water down to depths of around 50 meters, but have been caught at depths of over 300 meters.

The Grouper fish has a mild but very unique flavor, somewhat of a cross between Barramundi/Motha and Sole. Once cooked the flesh turns into a clean white color and the skin absorbs all the flavors of the sauce or broth that is poured on top of it or cooked in.

Tracing its origin to the Nile River, tilapia has been farm raised for decades and is cultivated in warm waters the world over. It is the second-most cultured group of fish in the world, exceeded only by carp. Domestically, tilapia are cultured in the southern and western states. Costa Rica and Colombia are major suppliers of fresh product. Three of the most common species cultivated in the United States are Tilapia nilotica, an emerald-green tilapia known for its high yield and rapid growth; T. aureus, a cold-resistant strain; and T. mossambica, noted for its reddish skin color, which makes it popular for the live market and display tanks. Legend has it that tilapia was the fish Jesus of Nazareth multiplied a thousandfold to feed the masses. This gave the species its frequently used name of “St. Peter’s fish,” a name the FDA does not allow to be marketed. Whole tilapia normally range from 1 to 2 pounds. Some buyers prefer fish larger than 2 pounds.
